Liptauer Cheese Spread

Resolution #35:  Will try new things.

Why wait till after the First to get a jump on those pesky resolutions? Start now!  Start with this.

Today’s special features – dun da dun dah… Anchovies!

This salty little creature of the sea is the perfect compliment to ricotta, cream cheese, and a delightful mix of spices.  My favorite, the caraway seeds.  Except that it makes me want a Reuben, but that’s neither here nor there.

Apparently this spread quite popular dish in Hungary – traditionally featuring cheese, spices, caraway, and onion.

Please, please, please let this spread meld.  Otherwise, the onion will overpower the other ingredients and be less than yummy.

Make sure those onions are chopped super fine, we don’t want our guests getting a mouthful of onion breath.

And maybe don’t tell your guests what’s in it, unless they’re like you and me, the ingredient list might scare them.


Liptauer Cheese Spread


1 cup ricotta cheese

6 ounces cream cheese, softened

1/2 small onion, finely chopped

1 tablespoon capers, drained

1 1/2 teaspoons caraway seeds

2 anchovy fillets, mashed or 2 teaspoons anchovy paste

1 teaspoon dry mustard

1 teaspoon paprika

2 tablespoons grated Parmesan cheese

3 tablespoons dry vermouth or gin


Cream ricotta and cream cheese together in large bowl.

Add remaining ingredients and beat until well combined.

Cover and refrigerate at least 1 day or up to 1 week to allow flavors to blend.

Serve with crackers or vegetables.
