The Easiest Cookies You’ll Ever Make

A few years ago some local towns-folk got their panties in a bunch over this recipe winning a cookie contest.

The fact of the matter is, these cookies rock!!! They are simple, they take no time, have very few ingredients, and will fly off your cookie platters!

The lover of complex and complicated recipes in me must admit, sometimes less is more!

1 (18.25 oz) package lemon cake mix
2 c frozen whipped topping, thawed
1 egg
1/2 c confectioners’ sugar

Preheat oven to 350 degrees.

In a large bowl combine cake mix, whipped topping and egg; mix until well combined.

Sift powdered sugar into a bowl. Using two spoons, form tablespoons of dough into one-inch balls and drop them in bowl of sugar.  Roll in sugar and place on parchment lined cookie sheet, a couple inches apart.

Bake 10 to 12 minutes until cookies are lightly browned.  Place on a wire rack to cool and enjoy!

  2. Wow! You made them! I’ve seen that recipe here and there for years in various old cookbooks and I never had the guts to try it. I’m glad to hear it rocked. This is one of those “better living through chemistry” recipes.

    • I tried it with chocolate cake, and it’s nowhere near as good as the lemon was. It just tastes like heavy chocolate cake.
