Spicy Blackened Salmon with Blue Cheese Sauce

Do your sinuses need clearing? Do you need a nice kick in the pants after a long day at work?  Whip this tasty dish up in no time and enjoy the most tender and deliciously flavorful salmon of your life! Warning:  Not for lovers of bland!

Spicy Blackened Salmon with Blue Cheese Sauce

1 tablespoon Italian seasoning
1 teaspoon cracked black pepper
2 tablespoons paprika
2 tablespoons salt
1/2 tablespoon cayenne pepper
2 tablespoons butter
1 tablespoon extra virgin olive oil
4 6 oz salmon fillets

Preheat oven to 400 degrees F.

In a small bowl, combine the Italian seasoning, pepper, paprika, salt and cayenne.  Season each piece of salmon with seasoning, both sides.  I suggest not going overboard on this step!

Heat a large skillet over medium-high heat and add the butter and oil.  Once the butter has melted, add the fish and cook 2 minutes per side.

Transfer the entire pan to the oven and cook for another 4 to 6 minutes.

Top with blue cheese sauce and enjoy!

Blue Cheese Sauce:

1/4 cup white wine
1/2 cup heavy cream
3/4 cup blue cheese crumbles

Place white wine in a medium saucepan and reduce by half.  Add the heavy cream and allow to reduce.  Add the blue cheese and whisk until smooth.  Sauce will take sometime to thicken, so I suggest making the sauce first.

  1. That is one of the best photos of salmon I’ve seen! I always have some salmon in the freezer and this is how I’m making my next batch!

No bland cooking here give me flavor all day! Thanks for sharing!

  2. I tried this last night and it was wonderful! I’ve done your chicken parm in the past and loved it, too. You sure know what you’re talking about…
