Perfect Sweet Potatoes!

Even people who do not like sweet potatoes have been converted by this recipe.  Like Paula Dean, throwing butter in large quantities into everything I make, makes a world of difference!

Ingredients
5 large sweet potatoes
1/4 t salt
1/4 c butter
2 eggs
1/2 t vanilla extract
1/2 t almond extract
1/2 t ground cinnamon
1/2 t ginger
1/4 t nutmeg
1/4 c white sugar
1/4 c brown sugar
2 tbl heavy cream
pepper to taste

Topping
1/4 c butter, softened
3 tbl all-purpose flour
3/4 c packed light brown sugar
1/2 c chopped pecans
1 bag mini marshmallows

Preheat oven to 400 degrees. Lightly grease a 9×13 inch baking dish.

Place sweet potatoes on baking sheet and bake for 35 minutes in the preheated oven, or until they begin to soften. Cool slightly, peel, and mash.  Turn oven back to 350 degrees.

In a large bowl, mix the mashed sweet potatoes, salt, butter, eggs, vanilla extract, almond extract, cinnamon, ginger, nutmeg, sugars, and heavy cream. Transfer to the prepared baking dish.

In a medium bowl, combine butter, flour, brown sugar, and chopped pecans. Mix your fingers to the consistency of course meal. Sprinkle over the sweet potato mixture.

Bake 30 minutes in the preheated oven, until topping is crisp and lightly browned.  Add marshmallows until browned.
